I saw a similar question posed on another park's blog and thought it would be something good to introduce here. I haven't seen this yet this off-season, sorry if this has already been done. I have a hard time every time CP closes and I have been there 34 times in 07 season. I look for fun stuff to do to get me through to May. :)
COSI Toledo - has a neat coaster simulator and other fun stuff.
Toledo Zoo - Lights Before Xmas and Frozentoesen - fun stuff. Train ride, merry-go-round, lights!
Pokagon State Park (Indiana) - Toboggan Run - 35-40 mph on an ice chute. Closest thing to a coaster I can find in the off season without going south.
Kalahari Waterpark - well, it should be fun, looking forward to our Dec. visit.
Dolleywood - hope the coasters are going when we visit in December.
USAF Museum - Dayton - neat place, cool jet fighter IMAX movie and a neat simulator.
Tubing at Snowtrails, if we get a winter!
We are contemplating Hershey Park (thanks for the tip Loopy!) and the Luge near Muskegon, MI. Also may hit the Air Zoo in Kalamazoo, MI. They have some rides and flight simulators that look fun. Also the 4D theater in Sandusky (Ghostly Manor, etc.).
Any other good ideas out there? Hope you all have a great off-season!

I forgot to add what others have mentioned, we do a lot of RCT, No Limits, watching CP coaster POV's, watching my CP DVD while my son moves the rocker recliner to match the coaster. :) Just kidding on the recliner thing, but we joke about it. After perusing the Hershey Park site, we have decided to take a short trip there and stay in the resort some time before they close. 30 rides, many are kiddie rides, but many are also adult rides, the lights, and other atractions look like a great time. Thank you Loopy for turning us on to this, we didn't know HP had a Christmas season! :) I wish CP had a Christmas season!

School, and hopefully some skiing come January and February. There's a Cedar Point coaster simulator at the Muncie Mall last time I was there, so I may drop a few bucks for Mantis or Magnum over the off-season in that.
The toboggan run at Pokagon can be a blast if its a fresh set of ice, but it can also suck if the winter is a little warmer than normal. But still, its quite fun and did give me a decent thrill that was comparable to a ride on Blue Streak.

Right now I have a count till March 22, the opening of King's Dominion. I am just glad Easter is so early this year. I'm waiting for Six Flags Great Adventure to announce opening day, which should be in mid March, it always opens before Easter.
