Well, the septum she's referring to is the cartilage between the nostrils of the nose.
Let's make it simple, if it isn't "earlobe" pierced is no. Well, anywhere that is visible in uniform anyway. You are allowed to have 2 piercings on the lower earlobe. That's it. No where else on the face. No tounge, lip, nose, cheek, eyebrow, the back of your hand, whatever. Anywhere that can be seen is not allowed.
Same goes for tattoos, no visible ones allowed.

I am going to be a server at Joe Cool Cafe and I too have my septum pierced. At previous serving jobs, I just got a clear retainer for it and flipped it up. No one ever noticed. I did end up taking it out because the piercing spent more time up my nose than down. It'd be in your best interest to take it out.

I would read the 'Jewelry' portion of this document. I'd say it's not allowed period.
