I happened to see the blacksmith working yesterday. Not sure how often he's there.
I don't think it is easy to fill those jobs. If it is still the case I think CP folks look for skilled "craftsmen/women" while they are in Gatlinburg at the annual resort merchandise convention they have there.

I remember the glassblowing, etc. shows. They were popular, not too long and gave you a nice place to rest your feet and see something neat.
As much as I love most of the rides that I'm about to mention, I wouldn't think that they are very family oriented.

Those are just publicity stunts, that are trying to bring in crazy thrill seekers to make more money.
Cedar Point used to be a nice place to go, let loose, and forget the rest of the world, now, the thing that Cedar Point does is say "let's shove the most expensive, fastest and highest thing we can fit in the park, and let's make another extra $7 million off admission each day, and then
make everyone wait through 4 hours of downtime, and 8 hours in line for the new ride.
Then let's put vending machines in line that charge $5 for a pop and $8 for a super small bag of chips."
The old Cedar Point was like, " let's put in an exiting new live show, and some cheap, but good food, and some mid sized fun rides that everyone will love!!, also, let's dress our employees in nice, classy uniforms, and hire mature, responsible adults that are 100% capable of doing their job perfectly."
I think that the park was plenty of kids rides and attractions. It would, however, be nice to see more family rides that everyone can enjoy together. The train, sky ride, ferris wheel, space spiral, and a few others are already there. But a dark ride and some additional flat rides that have either low or no height requirements would be great additions. Personally, I think that if the aquatic stadium is removed, that area of the park could add several smaller attractions that would be family (not kid or adult) friendly. The Disney dark rides are a perfect example of what I'm talking about and the return of some type of Schwabinchen (sp) kind of rides would be great additions. How about a kids inverted coaster like Runaway Reptar? Those can be enjoyed by almost everyone.
