The posted operating hours for a Saturday is 10:00am to 12:00am. Does that mean that the rides will be running until midnight or do they shut the rides down before that. The only reason I ask is because every time I look at the "live" webcams after dark, the place seems like it is dark and nothing is going on.

The rides continue to run.

The queue entrances close at the listed park closing time. So if you're in line by midnight, you'll get to ride.
