Maverick's horseshoe maneuver is probably one of the smoothest, most fun maneuvers that I've ever experienced. However, I think my favorite maneuver at CP (besides hills!) is either the loop on Mantis, or the Zero-gravity roll on Raptor.
I'm curious to see what other people like the best.

My favorite element at Cedar Point may be the "headchopper" on Gemini.
Even though Ive ridden that coaster for nearly 2 decades, I still "flinch" with my arms on that drop (I believe it's the second drop?).

^..third..and my favorite would have to be the twisted horshoe roll...or climbing the tower on the dragster in the front row.

My most talked about maneuver, because my favorite maneuver changes by mood, is that little section of Mantis where you are heading left toward the ground, after the photo, there is a slight hill and twist to the right, it is just such a natural feeling. (Most of you probably say that is where all the headbanging comes from) I believe its right before you head up to the end brake run.
But Raptor's Helix is the most intense, can't wait for my shoes to fly off some day.
GATEKEEPER-I came, I rode, I was mildly disappointed; until a second ride (rear left) put GateKeeper back on the...it's a nice ride list.

I also like the "half inversion" that goes over the tunnel on Maverick. It is towards the end of the ride shortly after you do the dive over the pond.
TTD's launch has to be the best 4 seconds on any roller coaster.
Although this is not at CP, Scream! at SFMM has a mid course break run that makes you feel like you are going to fly out of your seat. Very fun with the floorless car design. It is also a very fun ride in general.

I have to say the last helix on Wildcat is well... quite wild.
Other then that though id have to say Mav's first drop and ejector air hill are my personal favorites.
Honorable mention to Raptor too with the crazy non-trim helix.

I've always been a fan of the inclined loop and when Mantis opened, I loved it even more on a stand-up. Because it's not the usual, predictable loop, it really gives me a disoriented feeling. I wish more coasters had them.
I'm all for the loops, dives, and cobra rolls, but call me nostalgic, I think my favs are the helix finales on both Gemini and Mine Ride.

Is "maneuver" a technical term? I always thought they were called "elements". (At least Kevinj got it right)
