I don't doubt that Zamperla is currently working with customers on projects, but if those contracts were signed prior to ~June of this year, the existence of said projects does not imply industry confidence in Zamperla's capabilities given the TT2 fiasco.
Now, if customers are still lining up and signing new contracts in recent weeks despite the TT2 fiasco, then that's a different story. Hence my curiosity as to when these projects kicked off.

I don't think its a stretch to say Zamperla probably doesn't have another project of this size and complexity on the books currently no. I also don't think its a stretch to say they are still selling projects of which they have more experience on delivering upon.
Fair, but the takeaway would be that this project has harmed, or at the very least prevented from establishing, Zamperla's reputation for being able to successfully deliver on large scale projects. And if the goal of taking on TTD 2.0 was to grow the company into one that can be relied upon to deliver on such projects, it is an abject failure.

I understand both sides of this argument. We all know Intamin was chosen to break the barrier of innovation and height for MF and TTD when no other park was looking to push these limits. We also know for many years that Intamin has had the label of unreliability for many of their attractions. However, from a business (and common sense) standpoint, it makes the most sense to see how a large project such as TT2 performs before signing any contract. Just like I’m sure many parks took caution with Intamin projects at first too.

I agree with Dj here. While this is a good learning opportunity for Zamperla, I think this project will harm them moving forward. Rumor has it that Cedar Fair had a running list of companies to not work with. RMC, Intamin and Lemon Chill. Wonder if Six Flags will adopt the same principle? If so, then Zamperla, RMC and Intamin will have a much smaller pool of potential customers state side.

Not necessarily. While this isn't exactly a good look for Cedar Point, I don't think there is an example of Cedar Fair writing off a manufacturer after one go. Intamin got to mess up quite a few times before those conversations stopped. RMC too.
I think much of this depends on if they can fix the problem, the cost of fixing the problem, and whether new problems arise in the coming years. If TT2 goes up this year or even 2025, but has no further issues, Cedar Fair can owe all this to the challenges of working with a coaster as extreme as TT2. But if they can't fix it or they see continued down time, even as the coaster is clear for operations, then we likely won't see Zamperla on any major project again for quite some time.
