Ok, so I got my job as a ride op and it has the dates I will be working from this summer. Like May 16th, until the 22nd of August. These are tentative dates right that can be changed?
Also, is it easy to request days off during the season because at one time in June I will need a couple days off...
Yes, those dates can be changed by talking to your manager. I'm in the same boat as you. I'm trying to get off school a bit earlier and I don't know where I'm going to school in the fall, so my contracted dates will change once I get everything sorted out.
And yes, you can request days off (within reason), but again, that's just a request. No guarantee you'll be able to, but usually everyone who asks off can get it. A lot of people still take family vacations and what not :)

Adding to this, if your day off request is denied you can always either switch with a member of your crew or just give that day up to a member of the crew. You do this by filling out a shift change form which is available in the office.

As far as changing your contracted dates, if you want to be there longer, that's easy. Now if you are trying to shorten your contract, unless its for school purposes, there's little chance of that happening. Things can be done on a case by case basis though.
For days off, if you only need one day off, more than likely you shouldn't have a problem getting it considering you get 1 day off a week anyway so your team leader could just schedule it as your day off. If it's more than one day, you'll want to email your manager and have it contracted off as soon as possible. The sooner the better! Either way, if you need time off, to be safe you need to request it off as soon as you have dates. You must give at least 2 weeks notice and even then it's not guaranteed. :-)
