I went there for the first time a couple weeks ago, I was completely disappointed. My salad wasn't the worst thing in the world, but it was obviously packaged lettuce with a short variety of vegetables. There were two pizzas on the "buffet," and neither the cheese nor pepperoni looked rather appealing. Aside from the small salad section and the two pizzas, there were no other options.
The only good thing about the place is the park memerobilia on the walls. I thought that was pretty cool.

It has gotten better in the sense that some of the "western" foods have returned like BBQ pulled pork, mac 'n' cheese, mashed potatoes, and biscuits along with the pizza and salads. The quality of the selections seems to depend on how well they are maintaining the items on the line.

I think Chuck Wagon is the best value in the park. The salads are huge for that price (at least for CP) and the sides deal is amazing. But as TimChat2 said, it really depends on how well they keep up the line. Sometimes it's kind of sketchy, but most of the time it's great.
