Mean Streak and MF, especially when it is raining.
Riding MF at night in the rain is pretty ridiculous. With the spotlights at the bottoms, you can see yourself catching up to and then passing the rain on the way down. Looks like some sort of Star Wars warp drive special effect.

So far we've determined that just about every ride in the park is the best at night. So I'm going to go ahead and cast my vote for Cedar Downs.
Which, by the way, is rather groovy at night. It's so nicely lit in there and the view out to a colorful midway and then the darker area behind the ride just feels so amusement-parky to me. The sparkly lighting effects under Raptor happen frequently while you're in there, too, and that's fun to see.
I also liked the new Monster at night. It's easy to get on in the evening, one, and the new lights are a riot of color when you spin around on the ride. The blue and green bulbs cast such a strange hue over the red, orange, and yellow tubs, it's (unintentionally?) kind of trippy and definitely different than a day time ride.

There is misting and a speaker with werewolf sounds projecting near the bottom of the first loop. There are also spotlights. If you consider those to "special" or "cool" then more power to you. I consider them about the very, very least they could do to call it themed. I just wish Cedar Fair would stop reinforcing the line between amusement and theme parks. There doesn't have to be a line.
Yes, I was expecting much more in the way of theming on the ride then there is going by what Jason said in one of the videos. They have done fog before on Iron Dragon and the tunnels on Magnum and the lighting effects are really nice on Millenium Force. Nothing new here that hasn't been done before.

I am a big fan of MF at night.
Got my first ride on Gatekeeper during Mantis's Last Stand last year and it was ok. Not the best ride at night but pretty good.
Still need to get another night ride on Raptor this year along with Mine Ride.
For me the best night ride has to be The Voyage though, even more so than The Beast.
