Chances are, you'll close the ride, then head to luminosity to work "traffic" there. It's not known if water ride hosts will be doing that again this year, but that's what it was like last year.
You can also get extra hours by being a sweep or working in some other department. Park Operations has an extra hours form that you can fill out and they'll help you from there :)

You're on the same ride all season, but there are times when you'll cross-train at other attractions when they're short a person or something like that. Also, occasionally, at the beginning of the season, people will have their "home" ride changed. It's rare, but it happens.

I feel like I repeat this story all the time but, my first season I was contracted to Blue Streak, however when I got to the park, I ended getting sent to Cad Cars because they were short a person. After a couple days, someone from Twister didnt want to be there so they sent me over and I ended up staying at Wicked Twister for the rest of the season. I ended up getting cross trained at Windseeker for a weekend and I worked Blue Streak for a week. Towards the end of the season, I was asked if I wanted to transfer to Raptor for the rest of the season, but I said no. So it can happen. I know people who asked to get moved and they'll get switched. It just depends. They probably wont move you just because you dont like your ride, but if you show something they think could be beneficial to a different ride or if you have problems with your current crew.

Correct. And there's always somebody that is itching to get off early that works non water rides, so you could take their spot for the night. Just communicate with your supervisor and/or manager. You just have to speak up, because more than likely they aren't gonna come to you since there's a lot of people working in each ride area of the park.
