...if they can serve at scale, which is a different muscle. The only issue with Miller's is that the menu is incomplete. You have to cover categories so there's something for everyone, and as a non-red meat or seafood person, it has holes.
The combination of serving at scale and providing something on the healthy side is the tricky part for that particular location. It's relatively easy to sell burgers, pizza, and fried chicken, each of which can be assembled with various ingredients or sides to provide a reasonably diverse menu. But if someone is looking for something lighter, that usually means grilled chicken or fish, which is easy enough for a decent restaurant to serve provided they have competent cooks, but quite another thing for a seasonal joint outside of a metro area that employs college kids.

Is Perkins still there? They should get both spaces redone into homegrown restaurants that fit the location and serve a solid breakfast as well as dinner.
I guess it's been a couple years since we last ate at Perkins, but in our experience over the years it was a perfectly serviceable place to get breakfast. It's obviously no Berardi's, and of course overpriced for what it is, but it was good enough in our experience. Has that changed in recent years?

No it hasn't. I was pleasantly surprised at Perkins breakfast just two weeks ago. As you mentioned, overpriced for what it is of course but definitely a good fit for breakfast.
