I missed my chance to buy a Season Pass for CP around Christmas when its cheaper. Does CP usually give a discount anytime between now and opening day? Or should I go ahead and buy a season pass now? I don't want to spend $100 then have it go on sale for cheaper...like things typically do after you buy them

Not all season passes can be used at any park. A Regular Cedar Point season pass can't be used at Geauga Lake and a Regular Geauga Lake season pass can't be used at Cedar Point. Now you can buy an add-on for a Cedar Point season pass or a Geauga lake season pass that will make it work at both parks.
Also if you get a season pass from any other Cedar Fair park it is good at any Cedar Fair park. For example, if you get a season pass from Michigan Adventure or Dorney Park it is good at any Cedar Fair park (except for Camp Snoopy in the Mall of America).
Now, if you buy a season pass at Michigan Adventure it can cause a few problems. First you have to process the season pass at the park you bought it from so that means you have to go to that park first. Since Michigan Adventure opens later than Cedar Point and Geauga lake that means you can't use the pass at those locations until after you get your pass from Michigan Adventure. Unless you have had a season pass in the past in which case you can have it mailed to you with the old picture and get it whenever it shows up. At this point in the season you might not get it in time before opening day.
Basically getting your pass from Cedar Point has the advantage of getting it early. You can process your Cedar Point pass before the park opens. They have operating hours on there website that show when this can be done before May 7th. If you are planning on going to Cedar Point for opening day having your pass processed before that day is must. You avoid a huge line at the season pass center on opening day if you already have your pass. For 2003 I drove to the Point before opening day to get my pass so I wouln't have to wait.
Hope that helps!

That's what the 2005 Season Pass looks like.

Ok, another quick question. How long does processing for renewal take? For instance, If I sent in the form next week, would I have my season pass by opening day? I'd love to renew by mail to avoid lines on opening day to get my pass.

It seems like it's been taking them about 1-3 weeks to renew. It would be pushing it close, I would bet, but you would probably get them before opening day.
As for Joe Cool at tops, if not, you could just pay the $15 for the certificate at the park. You're still saving the $10 or whatever it is at Tops.
