That is some data I collected for a class. The blue is the ride height and the dark line is the acceleration. I don't think I have a scale for the graph, but you can get a good idea of the forces at different points on the ride.

I took a summer class at the University of Michigan on the physics of rollercoasters. We went to the park and rode rides with an accelerometer. It was in a fanny pack and and recorded acceleration on all 3 axis (x, y, z). Since it would be impossible to line the accelerometer up with the track (as in x pointing in the direction you're traveling), we added them all together to get the magnitude. The fanny pack also had a barometer which we used to get the height measurements.
If you're wondering, the black arrows point to 0 acceleration, or weightlessness.

Back in the day when I was around 13 years of age I emailed Cedar Point to ask what was the max G's, and they replied back "No coaster in our park has G's that go over 3.5"(or something to that effect. That was a long time ago if I remember correctly it was something like that.
"Mean Streak crew 2004"
Dragster does not pull 5 G's. Not even close. If I recall correctly the launch is about 1.5 G's, sustained for a couple of seconds.
At one point, the strongest G's in the park were pulled on Wildcat around 4, for a fraction of a second. That wasn't a sophisticated measurement, but one performed by students on a physics day.
