I noticed today at my local meijer that there was a Millenium Force poster showing the front of the train, and the logo on the front car was covered up. Does anyone know why they would do this?

Yeah, I noticed that too. I have no idea why they did this.

Could be copyright issues. Meijer may not have the rights to use the logo in advertisements. Why CF wouldn't give it to them, I don't know, but that would be the best explanation.

I also saw a smaller poster with a picture of a Maverick train and the letters "MAVERICK" on the front of the train and on the same poster there was a millenium force train going through an over banked turn with the logo on the front but you had to squint to see the logo. Its kinda weird.

Huh. Was that with the tickets or just somewhere in the store?

the one where you had to squint was on the rack with the tickets. The one where they covered up the MF letters on the front was by the entrance of the store , on a big sign.
