Millennium Force is always the ride with the longest line, followed by Mantis. Raptor is generally a longer wait in the mornings, but clears out later in the day. I would think you'll get enough rides on everything you want to, and can spend time at the shows during mid afternoon when crowds are at their peak.
I don't really see much of a difference between Sunday and Monday trips. People who take time off work generally do it on Fridays and Mondays (tacked onto a weekend), which is why Fridays and Mondays are busier than other weekdays.

After you ride these, either take the train back to MF, or walk down the Frontier Trail. This is when you should get a hand stamp for MF later in the day. After you get it stamped, make a decision to ride MF or not depending on the wait. Mantis will probably also have a long line...you shouldn't ride it yet. It's crowds dwindle as it gets into the late afternoon and early evening. This is the same with Raptor. Many guests see Raptor first so they ride it in the morning, making for a long wait. Around 3-4 in the afternoon, the lines will be no longer that 15 minutes.
Enjoy the day! If you head to the back of the park first, and progressively work towards the front of the park, you won't see any crowds before noon.
