Well, out at Knott's the whole park is a western theme (except for the 50's midway). Not sure if it's a coincidence about it spreading through the chain though. Of course, what else could you theme Maverick to and make it fit in Frontier Town?

Even Disney has a western themed section. It's not a trend, it's just standard for a park.
